Die-cut, corrugated kraft paper absorbs excess moisture from the outside of your dough but dries quickly between uses. A non-woven, polypropylene liner provides a clean, easy release when turning out the dough (credit goes to Meghan @onyeastwefeast for this innovative hack).
Rattan bannetons can be hard to clean and slow to dry, sometimes leading to the development of mold. When your paper bannetons get worn out, simple take them apart, recycle the kraft paper component, and fold up a new one. Our bannetons ship flat and require simple assembly. They include hardware, instructions, and liners.
If you're new to bannetons, you'll quickly learn that they are essential sourdough equipment. Bannetons cradle your formed dough during the long, refrigerated proofing stage prior to baking. During this stage, yeast activity slows and more complex flavors develop with enzymatic and bacteria activity.
