The Fourneau tray system works with a perforated silicone baking mat. The perforations in the mat give you the bottom crust that you're after while providing some insulation for ovens that are hotter on the bottom. The mat prevents dough from sticking to your Fourneau tray. This part is the correct size to replace the mat for a Fourneau Grande tray.
